Braai Broodjies (Barbeque Sandwiches)

So simple…Soooo tasty!

Braai is the Afrikaans word for barbeque and every South African household will have its own version of these toasties which serves as an excellent side dish to barbequed food.

Any type of bread will do, however ‘thins’ work well and tend to cook fairly quickly. Be sure that the coals are not too hot and turn frequently as they burn very easily!

If using thicker slices of bread they might separate during the cooking process. You can secure each sandwich with butcher’s string beforehand or, if you have one, a fish grill makes the job much easier.

Ingredients

  • 2 slices of bread per person (Warburton’s thins work well)

  • Butter

  • Apricot jam

  • Grated cheese (such as Cheddar or Edam)

  • Onion sliced thinly

  • Tomato sliced thinly

  • Salt and pepper

  • Dried herbs (optional)

 

Method

  1. Generously butter each slice of bread. On one slice per sandwich spread some apricot jam. On the other slice add an even layer of cheese followed by slices of tomato, onion and sprinkle over your choice of savoury seasonings. Salt and pepper will do fine but dried oregano or mixed herbs also work well.

  2. Carefully place the apricot slice over the onion, tomato and cheese slice. Press down gently but firmly to secure the two slices together as this will help them stay together during the flipping process later.      

  3. The sandwiches can be prepared ahead of time and kept in the fridge until ready to use. Place them over the coals turning frequently using a metal spatula. Depending on the heat they should not take more than 10 minutes. Once the outside is nicely toasted and the cheese melted, they are ready.
